I have no weddings for the next two weeks. Glorious. I'm taking two long weekends as a mini staycation. I'm hoping to come back from some time off feeling refreshed and energized for the new school year.
On my staycation to-do list is a bunch of practical things that I've wanted to get to for a while but haven't had/made time. The first item is a project I've been intimidated by for years: making and freezing meals for a month. Yikes.
Very first, I picked some standard dinners I think/hope will freeze well and listed ingredients:
Then, to decide if this is even possible, I wrote out recipes and made a play-by-play plan:
Whew.
So, we'll see if this works tomorrow night. Groceries are bought, the kitchen's (mostly) clean, and it's go time.
I prepped the onions* to get myself started and had a grand ole' time chop-chop-chopping a full bag.
I'm going to need all the strength I can muster so I'm off to bed. I'll be back with a full report!
*Did you know that if the onions are cold they lose some of their ability to make you cry? I'm not sure if it's scientifically true but it works for me. I popped those babies in the freezer before cutting and didn't shed a single tear in over half an hour of cutting. Fun fact.
